On both days there will be a talk - Food and flavours in medieval Scandinavia - with Daniel Serra, culinary archaeologist from 14-15. What did people actually eat in Scandinavia from the 13th to the 14th century? Can we see any traces of modern food culture in medieval food? Daniel will guide you through the flavours, dishes and finds of the Middle Ages in search of a contemporary food culture.
Daniel has studied recipes, texts, and archaeological finds in his attempts to recreate medieval culinary experiences and thoughts from everyday to feast. Come listen and learn more about what people might have eaten here 500 years ago!
Daniel also has ongoing workshops on both days - Medieval spice mixtures, flavours and accessories - approx. 12-14 and 15-16. With his help, you can mix spice mixtures, mustard and other things that enhanced food experiences during the Middle Ages and Renaissance. Everything is based on what we know from medieval sources and recipes. Among other things, a mustard is mixed that comes from a Danish recipe from the 13th century.
